Recipe/Tutorial: Spider Donuts (Undertale Undertea, part 2)

Day two of the Undertea is upon us!

First of all, I want to give a shoutout to Tumblr user velocesmells, whose art of Spider Donuts appealed to me so much that I loosely based my own Spider Donut decor on it! Please go check out her blog; I’m sure you’ll be as enamored with her take on the foods of Undertale as I was.

These yummy cake donuts are baked rather than fried, which means they’re lighter than fried donuts and lacking a crisp crust. They’re quite tasty and (slightly) less of a guilty pleasure.

SPIDER DONUTS
Yields: 12 miniature donuts

DONUTS
285g (2 1/2 cups) cake flour
60g (1/3 cup) sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
240ml (1 cup) spider cider (or blueberry juice)
1 egg
zest of 1 lemon
1/4 cup vegetable oil

1. Preheat your oven to 175°C/350°F and grease a mini donut pan. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Make a well in the center and pour in all remaining ingredients. Whisk together just until a smooth batter forms; try not to overmix.
2. Fill the batter into a large piping bag; this will make filling the cavities easier. Pipe batter into each cavity to fill them about 2/3 of the way. Bake for 11-12 minutes, or until set. You do not want them to brown. Remove from oven, allow to cool for just a couple of minutes, and then turn out onto a sheet of parchment while still warm. Allow to cool.

BLUEBERRY GLAZE
75g (1 cup) blueberries
1 tbsp lemon juice
Approximately 300g (3 cups) powdered sugar, with extra just in case
White Powdered color (optional)
Blue liquid or gel food coloring (optional)

1. In a small saucepan, combine the blueberries and lemon juice and bring to a boil. Once the berries have softened, mash them and run them through a sieve to remove the berry skins. Allow to cool.
2. In a medium bowl, whisk the powdered sugar into the blueberry puree to create a thick glaze. Test the glaze by pulling up a spoonful and allowing it to drop. If it takes about 5 seconds for the outline of the dropped icing to disappear into the icing, your glaze is the right consistency. Add more powdered sugar or lemon juice as necessary to achieve this consistency. If you want a more true purple color, add in 1/4 tsp of white powdered color and 10 drops blue food coloring and stir together.
3. Dip each donut halfway into the glaze (dipping the part that sat in the pan, not the rounded tops) and place on a parchment sheet to set.

GANACHE WEBBING
75g (1/3 cup) white chocolate pieces
3 tbsp heavy cream

1. In a small bowl, combine the chocolate and cream. Microwave in 30 second intervals, stirring between each session, until melted. Stir until smooth and creamy. Fill into a small piping bag and allow to come to room temperature.
2. Snip a tiny bit off the edge of the piping bag, so the ganache flows in thin strands. Pipe irregular webbing over each donut. Enjoy!

    I love the idea for this recipe!! I’m one that always loves tea parties and making things for them I’m going to have so much fun with these!!!

    But also, do you think blackberries would be a good substitute for blueberries? My mom is allergic to blueberries, but I don’t want to keep her out of the fun!!!

    Umm I think I must’ve done something wrong haha
    I followed the recipe exactly but my donut batter turned this strange sickly green when I put the wet ingredients in.
    Any idea?
    Still a wonderful recipe haha!

      Oh my, how unusual! I do know that blueberries sometimes go a bit green when exposed to baking soda. What sort of liquid did you use, apple cider or blueberry juice?

        I used apple cider but they only had the sort of tea bag apple cider so maybe that’s what happened?
        they still tasted good so that’s a that matters haha

          That’s definitely odd! Maybe the bought cider was just super yellow or something. Since I haven’t used that kind of cider I can’t know for sure.

          I’m very glad they were still tasty! That’s definitely the most important part. 🙂

            I love this Especially since Muffet is my favourite Undertale character, but just a small question.
            Can I also follow this recipe to make 6 normal-sized donuts? Since I have one of those but just to be sure I’m asking this.

            Hi, Dennis!

            I don’t see why you wouldn’t be able to! Just make sure your molds are filled up to the same point.

            As for the comments, I’m really sorry about that! Your comments made it through, there’s just a delay if you get flagged in a spam filter, which yours did for some reason. The filter is a little funny sometimes, but I try to sort comments every day. 🙂 Once I unflag your comment once any future comments you make should be approved automatically, so hopefully you won’t have this problem again.

      Hi Natasha,

      I think it should be okay to use a different fruit juice, perhaps cranberry or strawberry, and just add some blue food coloring. It should still taste good!

    Hey, so first of all; great recipe!
    BUT I dont have a donut form, and I REALLY want to make this for my brothers 16th birthday 🙁 So I’m gonna use a cupcake form instead. How much do you think I should fill up the cupcake forms? I don’t want them to turn out too gooey..

        Thank you for the reply! But what would you think would happen if I just cut out the batter with a mug or a cup and made the hole in the middle with a smaller cup? Do you think that would work?

          Hey! Okay, so if that’s what you’re considering I actually would do it this way: bake them in cupcake pans and let them cool completely. Then cut out the hole in the center with either a small cookie cutter or a bubble tea straw or really whatever works, size-wise. I think if you cut out both the inner and outer shape you may run the risk of tearing things apart, so if you bake them in cupcake pans first at least the outside will be nice and stable. 🙂 As long as you wash the thing you’re cutting with between each cut (or else crumbs will go everywhere) you should be golden.

      Hey there! So, I plugged the recipe into a calorie counter for you real quick.

      Spider Donuts, 1 donut
      308 Calories
      60g Carbohydrates
      41g Sugar
      7g Fat
      3g Protein

      So basically, pretty standard numbers for a donut. You won’t use nearly all the white chocolate glaze, so I halved that part of the recipe. You won’t use all the blueberry glaze either, so the actual numbers are likely a bit lower.

      For future reference, MyFitnessPal has an amazing feature where you just enter the URL of a recipe and it will calculate the nutrition data for you! It’s super fabulous and I highly recommend it.

        could i add food coloring to the batter itself to make it purple? and if i can how much food color would you recommend

          Sure, you definitely can! I suggest using a gel color and going a drop at a time until you like the color. It will not change too much when it bakes. The outside of the batter will brown up no matter what, though, so don’t get worried if you pull it out and it just looks grey/brownish! 🙂

      Hi Sharon,

      There isn’t really a good replacement for the baking soda. You can try using double the amount of baking powder, but the rise will likely not be as good.

      As for the oil, you can use any neutral-tasting oil. Olive oil has a very strong flavor and it will likely overpower the other ingredients in the donuts, so I don’t recommend it. Canola, grapeseed or peanut oil are acceptable. You could also try melted butter or coconut oil.

    I was looking up some donut recipes and found yours, and this is looking amazing! I just have one question;
    Can I substitute milk for the blueberry juice? I don’t have blueberry juice on hand, but I do have quite a lot of milk. Of course I guess they won’t be very blueberry flavored but I just want to try these out since I just got these cool new donut pans. Thanks in advance for your response! 😀

      Hi there! I’m so sorry for the delay, you got caught in our spam filter and I was traveling to Europe and got behind on comment filtering.

      You can absolutely use milk in this recipe! I would recommend changing the leavening to 1.5 tsp baking powder and 1.5 tsp baking soda in that case.

    I absolutely love this more than I can say! I have a deep fondness for tea and pastries, so Muffet was instantly my favorite character. Adding the spider cider to the donut batter is also how Muffet makes her donuts, so it’s even cooler! I will definitely be trying out these recipes for my own festivities! <33

    I’m actually making the recipe right now! I’ve followed up the recipe exactly until the part with the well in the flour. After stirring, the batter is a lot more liquidy than I expected. I don’t think I overmixed, but this is worrying me. I did use blackberries, but I don’t think that’s it. Please respond as soon as possible!

        Hey. Unfortunately, no, they did not turn out well. They weren’t even donuts; they came out filthy brown, and had a texture like cheap jellow.
        I don’t know what I did wrong, but they are absolutely nothing like what you’ve shown. ?
